Zesty Zucchini Cubes

Zucchini can be bland but this recipe has good flavor, is low in sodium and pairs well with grilled chicken or fish.  Adjust the ground red pepper according to your taste.

1/4 cup red wine vinegar
1/4 cup of dry red wine
1/4 cup of honey
2 tablespoons of chopped red onion
1 tablespoon of Worcestershire sauce
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon of cumin
1/4 teaspoon or less ground red pepper
1 clove of garlic minced
4 cups of diced zucchini

Combine first 10 ingredients and heat in microwave until hot about 2 minutes or a little less.  Stir. Pour over zucchini and marinate for at least an hour. Drain and serve.
